Application
Erythritol is used as a low calorie sweetener in baked goods like cakes and cookies, in confections, and in beverages like diet sodas, energy drinks, and flavored waters. It can also be used in dairy products, sauces and dressings, chewing gums, dietary supplements, and processed fruits and jams.

Formulation
Erythritol is used as a low calorie sweetener, but it also has high heat stability and high solubility so it is able to be formulated in a wide range of applications.

Specification
Appearance: White, crystalline powder, similar to sugar.

Taste:  The sweetness of erythritol is similar to sugar – 20-30% less sweet in taste.

Solubility: Readily soluble in water, with greater solubility at higher temperatures.

Heat stability: Stable under a wide range of temperatures (melting point of about 121C), making it suitable for baking and cooking applications.
