What is Erythritol?

Derived from the fermentation of glucose from corn or wheat starch, erythritol provides a sugar-like sweetness while reducing caloric content.

Erythritol is about 70% as sweet as sucrose (table sugar). It’s often used alone or in combination with other sweeteners like stevia or monk fruit extract.

Information About Erythritol

Application
Erythritol is used as a low calorie sweetener in baked goods, confections, and in beverages like diet sodas, energy drinks, and flavored waters. It can also be used in dairy products, sauces and dressings, chewing gums, dietary supplements, and processed fruits and jams.

Formulation
Erythritol is used as a low calorie sweetener. It has high heat stability and high solubility.

Specification
Appearance: White, crystalline powder, similar to granulated sugar.

Taste:  The sweetness of erythritol is similar to sugar – 20-30% less sweet in taste.

Solubility: Readily soluble in water, with greater solubility at higher temperatures.

Heat stability: Stable under a wide range of temperatures (melting point of about 121C), making it suitable for baking and cooking applications.
