Caseinates

What are Caseinates?

Caseinates are salts derived from casein, which is a protein found in milk. There are two main types of caseinates: sodium caseinate and calcium caseinate.

In the meat industry, caseinates are utilized as binders and emulsifiers. They help improve the texture and moisture retention of processed meats.
