What is Casein?
Casein is a type of protein found in milk and dairy products. It accounts for about 80% of the total protein in cow’s milk and is the primary protein in cheese.
There are two main components of casein: casein rennet and casein acid. The choice of using acid or rennet, or both, depends on the type of cheese being produced.
The food industry often uses various forms of casein, such as sodium caseinate and calcium caseinate, based on their specific functional properties.
