Monocalcium Phosphate

What is Monocalcium Phosphate?

Monocalcium phosphate (MCP) is primarily used as a leavening agent in the baking industry. When combined with baking soda, it produces carbon dioxide gas, which helps dough rise during baking.

MCP acts as an acidulant, providing a tart flavor. It is often combined with the slow-acting acid sodium acid pyrophosphate (SAPP) in baking powders.
