Anhydrous milk fat, also known as ‘Ghee’ or ‘clarified butter’, is a rich in fat dairy product. Butter is heated to evaporate all excess moisture and remove non-fat solids. It results in a very pure and concentrated form of dairy fat. It is used in the food and beverage manufacturing industry to improve flavor, texture, shelf life, and creaminess of products along with many culinary applications as well.

Anhydrous milk fat has several applications in the food and beverage manufacturing industry. It is used in baking, confections, desserts, ice creams, sauces, and even meats to add flavor, texture, and creaminess. In addition, it is used in cooking for frying and sautéing. It is often used as a butter replacer as well, especially in applications where moisture content needs to be controlled or when a higher melting point is desired. It can even be used in infant formulas to provide a source of essential fatty acids that are similar to that of breast milk.

Formulation process involves separating milk fat from milk and removing water and non-fat solids, resulting in a pure form of butter.

Appearance: Creamy and yellowish in color with a smooth homogeneous texture. It has a butter-like aroma, along with a buttery taste. Visual appearance can also be dependent on the type of milk used to create the anhydrous milk fat.

Particle size: Large homogenous creamy texture with a low melting point.

Melting point: 30-34C
