Application
Gum acacia serves as a food stabilizer, emulsifier, and thickener, enhancing the texture of food items without compromising taste. It is commonly used in wine, chewing gum, yogurts, sodas, soups, baked goods, dried egg products, seasoned and coated nuts, dairy products, and sugar-free candies.

Formulation
Acacia gum is sourced from Acacia tree sap and is ground into powder for food and beverage applications. It is available in, flakes, granules, or powder.

Specification
Appearance: Before being ground, acacia is a white/orange/brown in color and has the appearance of spheroidal tears. Once ground, it comes in yellowish-white flakes, gruanules, or powder.

Particle size: Variable – it is available in different grades with varying levels of purity and particle size to formulate products with different characteristics.

Solubility: Soluble in cold water, but not ethanol.

Viscosity: Low viscosity.
