Formulation
Sweetened condensed milk is produced by combining milk and sugar and then reducing the mixture to remove water. Heat is added to the milk and sugar mixture to dissolve the sugar and this process also kills any present bacteria thus extending the shelf life and making it a shelf stable product.
Specification
Appearance: Creamy, thick, and smooth texture that is typically off white or light cream in color. The taste and aroma are sweet.

Sugar content: Sugar content varies, but it usually ranges 40-45% of the total product weight.

Shelf Life: Long shelf life – the range is usually 1-2 years if unopened.

Composition: Composition ranges, but is usually 8-9% fat, 20-22% non-fat milk solids, 10-11% lactose, 40-45% sugar, and 25-27% moisture.
