Formulation
Tartaric acid is most commonly used in winemaking to maintain chemical stability and pH of the wine, meanwhile enhancing taste and preventing spoilage. In baking, it serves as a leavening agent to increase volume and stability of beaten egg whites. It is also used in confections for its sour flavor, like soda, fruit-flavored drinks, gelatin, and hard candies.
