Malic Acid is used in the manufacturing of beverages, beverage mixes, confections, jams & jellies, frozen desserts, and baked goods. It is used extensively in fruit-based and fruit flavored products.

Formulation

Malic Acid is often used as a flavor enhancer and pH regulator due to its ability to intensify a finished products’ flavor and mask unwanted aftertastes. Malic acid excels in enhancing fruit flavors allowing for more a balanced and natural taste. It is also used to impart the sour, tart flavor found in sour candies.
