Application
Tartaric acid is commonly used in wine production, baking, as a flavoring agent, to preserve food and beverage products, as a gelling agent, emulsifier, color retainer, in confections, and more.

Formulation
Tartaric acid is most commonly used in winemaking to maintain chemical stability and pH of the wine, meanwhile enhancing taste and preventing spoilage. In baking, it serves as a leavening agent to increase volume and stability of beaten egg whites. It is also used in confections for its sour flavor in sodas, fruit-flavored drinks, gelatin, and hard candies.
